Where they grow
This is what ripe looks like
Figs stay on the tree until the skin softens and the neck bends. Pick a week early and you get a fig that never sweetens.
Ours come off at full ripeness. That is where the sweetness comes from, and why they will never look uniform.

Four days in the sun
Figs go from the tree to the drying beds the same day they are picked. Four days under polytunnel with the air moving, turned by hand. No sulphur to hold the colour, no oven to rush it, no glucose coating to firm them up.
Slow drying is why they stay soft and taste of fig rather than sugar. It is also why ours are darker than the pale, uniform ones on a supermarket shelf.

Questions
Why are they so soft, and why so dark?
Because nothing was done to stop either. Pale, uniform figs are treated with sulphur to hold their colour and often coated with glucose to firm them up. Ours get neither.
Dried slowly in moving air and vacuum packed the same week, they stay tender instead of going leathery, and the sweetness is the fruit's own. Untreated fruit browns as it dries — the colour and the softness are the proof, not a fault.
How do I eat them?
Two figs soaked overnight in water, taken in the morning, is the oldest habit in the Indian kitchen and still the best way to eat them. Otherwise: straight from the pack, chopped into curd or porridge, simmered into a kheer, or baked.
How long do they keep?
Best before 12 months from the packing date printed on the pack. Store in a cool, dry place away from direct sunlight. Once opened, keep sealed and refrigerate in warm weather.
Natural sugars may crystallise on the surface over time. That is normal in untreated dried fruit and does not affect quality.
