What you get

• Unpolished, which is why it is matt rather than shiny. Polished toor dal has been rubbed with oil or water to look glossy.

How to use it

Soak twenty minutes if you have the time. Three to four whistles with a pinch of turmeric. Makes sambar, pappu and rasam.

Storage

Store in an airtight container in a cool, dry place, away from direct sunlight. Best before the date printed on the pack.
